Baked Oatmeal


What You'll Need:
  • 3 cups rolled oats
  • 1 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup melted butter
  • 2 teaspoons vanilla extract
  • 1 to 1 1/2 cup of your fruit(s) of choice {I chose strawberries- You could also do blueberries, blackberries, raspberries, etc...} 

Preheat oven to 350:
Simply mix in oats, sugar, cinnamon, baking powder, and salt. In a separate bowl, beat together milk, eggs, butter, and vanilla. Beat ingredients into dry mixture and stir in fruit. Pour mixture into a 9x13 baking dish and bake for 40 minutes. 

*This recipe makes A LOT so if it's for 2 people, you can cut the recipe in half-- D. & I both ate our share & still had half the dish left
