Eggplant Parmesan:
What  you'll need:
  • 2 Eggplants
  • Your favorite spaghetti sauce [I love the Traditional Prego]
  • Mozzarella cheese
  • Parmesan Cheese
  • Italian bread crumbs
  • 3 eggs
Preheat oven to 350.

  1. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
  2. In a  baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. 
  3. Bake for about 30-35 minutes
  4. Enjoy!
  5. [PS- I added cooked pasta into the dish for a little extra carb loading for my half marathon tomorrow]

  1. this is the dish that everyone says is supposed to induce labour. since i'm not pregnant, it might just induce labour pains of deliciousness...
