This is what my day off looked like
{If you add in D. & Richelle into the mix}

Doesn't that soup look rad?
This was a recipe my mother-in-law gave to me & it is one of the many reasons I love her.
Here's the recipe:

Black Bean Chili
What You'll Need:
  • 1 can of black beans
  • 3 tbsp olive oil
  • 1 onion, chopped
  • 5 tsp crushed garlic cloves
  • 1/4 cup chili powder
  • 4 tsp oregano
  • 4 tsp cumin seed
  • 1 tsp ground coriander
  • 1 tbsp paprika
  • 1/4 tsp cayenne pepper
  • 2- 14oz cans of veggie broth
  • 1 can diced tomatoes
  • 1 small jalapeño, seeded & diced
Sautee onions in olive oil, once tender, add garlic- Mix in chili powder, oregano, cumin, coriander, paprika, cayenne pepper and cook together for about 5 minutes.
Add broth, tomatoes, jalapeño, beans & bring to a boil.
Reduce heat & cook for 45 minutes.
Uncover and cook until beans are tender and chili has thickened. 
Pour in bowl, add sour  cream & cilantro, & enjoy!

  1. Drooling over that first picture! What are those anyway? Are they donuts? Any whoo they look delicious. Ooooh Black Bean Chili needs to happen around here soon. I wonder if I could throw that all in the crockpot? Ok I'm rambling! Cute blog!

  3. The donuts are ones I make from pillsbury biscuits with a homemade buttercream frosting- They are delish!

    & I'm sure it could work in a crockpot-- I've never tried it, but that would be a great idea && it really is as great as it looks-- it's one of D's favorites! :)

  4. You've got me drooling. I'm honestly not a vegetarian, but I often don't eat meat for days or have it once a day. The cafeteria at PBA has a vegan line, and that just tends to be the freshest food. Love it. Some day when I can give up chicken I'll make the transition. For now I enjoy tofu a few times a week or replace some version of legumes for the protein in my meal.

    I bet you wanted to know all that. :]

    In other news, you look great! Your smile is electric and ohio looks good on you. Tell Ash hey next time you see her!

  5. Travis, I love it! I always recommend to people that they don't necessarily need to go vegetarian just because I chose to, but that I definitely encourage them to try it a few times a week- it saves money and it's fun to try something new and move out of your comfort zone!

    I'll make sure to tell Ash & I'm excited to read your blog! I just found it today :)
