Over the past two days I have had two ridiculously good meals that i wanted to share with you
& get this,
They both are completely vegetarian!
No worries though for all you carnivores out there, these can be made with meat too if you so desire.
[But why would you want that?!]


Sunday Night:
Beans, Bowties, Spinach, & Cheese


What you will need:
8 oz. bowtie pasta/farfelle {Or in my case I used linguine}
1 tablespoon Olive Oil
3 cloves of garlic, crushed
3 medium tomatoes, diced {I used a can of Italian diced tomatoes}
1 can of Great Northern Beans, drained and  rinsed
1/4 cup of Veggie Broth {I actually didn't have any around so instead used a mix of a tiny olive oil & tomato paste}
5 cups of baby spinach {Or if you have a spinach plant like me, use that!}
3/4 cup of Mozzarella Cheese
1/2 Parmesan Cheese, grated {optional}



In a large skillet heat oil and add garlic and tomatoes. Cook until tomatoes are soft {about 2 minutes} then add beans, broth, spinach and cook until spinach is wilted-- stir constantly. Add salt & pepper then add already cooked pasta to mix. Toss cheese into the combination and serve immediately.






Altogether, this meal probably took me 15 minutes tops.


Monday Night:
Mama's Sloppy Joes


What you will need:
Fantastic World Foods Vegetarian Sloppy Joe Mix {I got this at Giant Eagle}




3oz Tomato Paste
2 tbsp Olive Oil
1/2 cup white onion, chopped
1/4 cup fresh basil, chopped {Until my garden grows, I just have dried basil so I just added to taste}
1/4 cup tomato, diced
2 tbsp Brown sugar
3 tbsp chili powder {I just added to taste}
hamburger buns


On stove top, mix together Sloppy Joe mix with 1 3/4 cups of water, tomato paste, and 1 tbsp of olive oil. Once that's complete, set aside and start heating a pain with other tbsp of olive oil and the onions. Once onions are caramelized {approximately 2 minutes}, add the rest of the ingredients. Put mixture on buns and enjoy!




This particular recipe only took me  like 10 minutes!
